How to make a cow stuck in a pressure cooker:
Separate the necessary ingredients for the preparation of this recipe for cow jammed in pressure. The cut of beef rib must have fat, but not in excess, since it contributed flavor and nutrients to this recipe.
Tip: if you don't want to use tomato extract in the recipe, add another very ripe tomato to the recipe.
Peel the cassava and cut it into medium pieces (rectangular or square). Chop the tomato and the green smell. Cut the onion into strips or chop them if you prefer. Knead the garlic cloves. Cut the cabbage leaves into thin strips.
Tip: some traditional versions of the bogged cow don't mention the introduction of cabbage leaves, but we guarantee that this vegetable will enrich and bring even more flavor to this delicious dish.
In a medium pressure pan, heat the oil and add the pieces of beef ribs to sauté, sealing all sides of the meat.
Add the onion and let it simmer for a few minutes.
Tip: if you want to add a special touch to the stew, include 3 tablespoons of brandy (cachaça) at this moment to accentuate the flavor and wait to cook until the alcohol evaporates.
Add the tomatoes and garlic and sauté a little more.
Add the tomato paste and mix well. Keep sautéing, stirring occasionally.
Season with salt and pepper and mix well.
Tip: other seasoning options for jammed cow include Bahian seasoning, paprika and paprika. When in doubt, use the spices of your choice!
Add the hot water and the manioc cut into pieces.
Add half the green smell and make sure that the water has covered all the ingredients, without going beyond the safety measure of the pressure cooker. Close the pan and cook for 40 minutes from the moment the pressure starts.
Turn off the heat after that time and wait for the pressure to come out completely. Open the pan and check that the cassava is cooked and soft, pricking it with a fork or knife. If it is not yet cooked, leave it for 10 more minutes under pressure.
Finally, add the cabbage strips and let the jammed cow cook (without pressure) for another 5 minutes or until the cabbage is reduced slightly.
Tip: the jammed cow's broth will be very thick, due to the cassava that is falling into the broth. For this reason the jammed cow dish resembles a stew, great for the coldest days!
Turn off the heat and serve this rib recipe with manioc in the pressure cooker followed by rice and salad. Decorate with the remaining green scent and prepare to receive many compliments!
